Founded in 1968 by member Associations (some of which had exceeded 200 years of foundation and were born in the past as brotherhoods, corporations, or mutual aid societies of "cookers"), it obtained in 2001 the "Juridical Recognition" as a body capable of establishing the representation, on the national territory, of Chefs and of those who are dedicated to the professional culinary activity, supporting their development, promotion, and training.
